pumpkin muffins

[we had a little thanksgiving meal for two tonight of pumpkin muffins, roasted vegetables over couscous with parmesan and applesauce]

Good evening,

This afternoon when I got home from teaching all day I decided to make my favorite muffin recipe, pumpkin muffins. This has been my favorite since I was a child and if you like the flavor of molasses and are not afraid of a little butter, then try this one out. This makes a tender muffin and tonight I altered the below recipe slightly by substituting 3 T. of the butter with an additional 3 T. of pumpkin. This made it even more tender and it quite nearly melts in your mouth.
So here it is:

HEATHER'S FAVORITE PUMPKIN MUFFINS
3/4 c. brown sugar
1/2 c. butter, softened
1/4 c. molasses
1 egg
1 c. pumpkin {I used canned}
1 3/4 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. pecans or raisins or both, optional

Combine sugar, butter, molasses, & beat well. Add egg & pumpkin, beating until smooth. {I just mix with a wooden spoon.} Stir together the dry ingredients and add to the pumpkin mixture. Stir just until moistened. Fill lightly greased muffin pans, half full. This will make more than a dozen muffins. With my extra batter I filled a couple mini bread loaf pans.
Bake in a 350 degree oven for 20 minutes {or until toothpick inserted in middle comes out clean.}
These are so good warm and cut in half with a little dollop of butter melting into each half.

i will let you know how it goes with treacle - as molasses can be a bit tricky to find! will try it as soon as i can. it sounds scrumptious :)

I plan to make them on Thursday morning -- we like to have pumpkin muffins with our breakfast on Thanksgiving. I still haven't settled on one particular recipe to make every year, so I'm excited to try yours!

Hi there, I have a little query re the recipe. When you say 1 cup of pumpkin, do mean chopped raw pumpkin, or cooked and mashed pumpkin?

They look delicious, so I'm keen to try them out. thanks!

heather, these looked soooooo good, i -had- to make them for everyone at the office. we have a couple of picky eaters here, so i swapped the raisins/pecans for dried cranberries..and topped them with some almond brickle before baking. they were AWESOME!! thank you, thank you!

Thank you! My husband's been dropping hints about pumpkin muffins whenever he's near the small pie pumpkin that's been adorning our kitchen table. It's just been cut and cleaned and is roasting in the oven...
Love to see another recipe with molasses in it - blackstrap molasses is chock full of vitamins and minerals, so I try to use it in baking whenever possible.
(not that we make muffins to get our vitamins!)

Hi there! We don't celebrate Thanksgiving in Australia but i never need an excuse to cook with pumpkin. I made some changes to the recipe:

I used wholemeal (or whole wheat) flour and i substituted applesauce and 2 T. butter for the 1/2 c. butter. It's not easy to find molasses here so i used treacle instead.

The muffins came out beautifully! Thank you, Heather! My husband had 4 for dinner so i know he loved it as well.
